Cooking in the RV – Stuffed Mushroom Casserole
Little known fact – I came extremely close to doing a cooking show called “A Rue with a View” but could not get a good camera angle in that kitchen. Now I truly can make a rue with an amazing view!
Today, I revive the idea and cook my stuffed mushroom casserole.

1 Package of Sage Sausage
1 Package of Baby Bella Sliced Mushrooms
1 Package of Sage Stove Top Stuffing
2 Tablespoons of Butter
A Goodly amount of Garlic
3 Tablespoons Marinara
1 Package of Shredded Mozzarella or 6 slices
Oil For Pan
Start by browning sausage when almost complete drain grease and add mushrooms, butter, and garlic and saute till mushrooms are nice and tender. While that is going, prepare your pan by adding a little olive oil or spray before preparing the stuffing in the pan as per package instructions except don’t add butter because there is a lot in the (doesn’t matter if it isn’t boiling water you will be putting it in the oven) Combine sausage & mushrooms with the stuffing in the baking pan. Top with marinara and mozzarella and bake in a 425-450 oven till the cheese melts.
Makes 4-6 servings unless you are a pig like me and then it is 2 real helpings and 2 small spoons for Prince Rupert.
